Valentine's Brunch with Cork Bar and Restaurant

Ruth Corcoran from the Cork Bar and Restaurant makes two meals perfect for a Valentine's Day brunch.
To make the Bananas Foster French Toast Casserole you will need:1 Loaf French Bread, Sliced
6 Large Eggs
1 Cup Heavy Cream
2 tbsp Dark Rum
4 tbsp of Banana Liquor
1/2 cup Light Brown Sugar
1 loaf of French bread, sliced (approx 10-12 slices)
3 ripe bananas, sliced
1/4 tsp. cinnamon
1/4 c toasted, chopped pecans
1 stick (1/4 cup of butter)
To make the Brunch Egg Casserole you will need:
8 large eggs
1/2 cup of milk or heavy cream
6 stocks of fresh asparagus rinsed and cut in 1 inch pieces*
1 cup of fresh spinach*
1 cup of mushrooms, sliced*
1 cup of breakfast meat, pre-cooked and chopped (you can use bacon, ham or sausage - whichever you prefer)*
1 tbsp butter
1 cup of Gruyere cheese, grated*
1 small shallot, minced
1/4 tsp of salt
1/8 tsp of black pepper
