With all the hype and the Super Bowl just days away, we're getting everything ready for the big game. Now, we may not agree on who we want to win the game, but one thing that everybody can agree on is that we like lots of food. And if you're looking for a new game-day favorite, today's popular-as-ever fish tacos are just the ticket, and talk about easy.  We start by cutting up some fish fillets into chunks and seasoning them with a combo of cumin, chili powder, garlic and a bit of salt. And if you're wondering what kind of fish to use ... after testing many, we found that U.S. farm-raised catfish works great here because not only is it mild-tasting, it's a little firmer and holds up really well when we saut it. Plus, it's a great value, which is pretty important when we're feeding a crowd. And to give our tacos their crunch, we combine some bagged coleslaw mix with a cut up onion, chopped green pepper and a diced up orange (to give it a fresh taste) and we're going to toss that with a homemade vinaigrette. And once our catfish is done, we add a squeeze of lime juice and a little chopped cilantro ... and it's ready to spoon into our flour tortillas. What a great way to lighten up our game-day buffet. Not only is our slaw packed with all sorts of veggies, our U.S. farm-raised catfish is heart healthy, and the tortillas have less carbs than bread. Put out a platter of everything and let everyone make their very own. And when they roll up the flavor-packed fish with the crunchy slaw, you'll definitely have a game-day winner! And that's definitely ... as Mr. Food would say ... "OOH IT'S SO GOOD!!" Very good.
