This time of year, calls for stick-to-your rib chilis and soups and stews, ya know...the kind you sop up every last drop with a hearty slice of bread - and today, we've got one that gets its inspiration from the popularity of backwoods, country-style cookin' - just watch! In a soup pot, we've browned some ground beef till no pink remains ...(takes just minutes) -we'll add in some beef broth, canned black-eyed peas... yup, juice & all..., a few diced potatoes with or without the peel, that's your choice, some cut up celery, carrots and onions......and some seasonings, including, get this... a bit of smoked paprika! Oh, if you're not familiar with smoked paprika, we can find it right along with all our other spices in the market, it adds a really nice smoky taste to our recipes...and if you don't have it? No problem at all! Regular paprika will work just fine! Okay give it a good stir...and once it comes to a boil, we'll turn it down and simmer it for about an hour or so, just till the potatoes are fork tender... And if we want, we can even make this the night before, see, that way the flavors will be even richer... either way.... When we dish up this tasty as can be, all-in- one meal with a basket of our favorite bread or rolls to sop up every last bit...it's guaranteed to warm us from inside out...mmm...mmm!
