Mr. Food:] We're on location today deep in the heart of Texas, where we're taking a little tasty tour of Houston! And as soon as the sun came up on this bustling metropolis with its classic old western roots, we were on the go! Now, our first stop was to the Johnson Space Center, home of the astronaut training and Mission Control. Then it was on to the world's largest and most action-packed rodeo, where we watched cowboys compete head to head! Now, all that excitement really built up my appetite, so we headed over to the Goode Company Texas Bar-B-Q. It's a place well-known for down-home Texas cooking! Ya know, I just love this place! And the aroma of barbecue was irresistible, so I checked it out! [Levi Goode:] The secret to our barbecue is that we season all our meat at least 24 hours in advance, using our own blend of seasoning. We put it in our barbecue pits. This particular pit holds over 1300 pounds of meat. We cook it very slow over mesquite wood. It cooks for up to 16 hours. That's what make it so tender and so good! [Mr. Food:] When they carved some BBQ brisket for me, it was tender and juicy with just the right smoky flavor! Mmm mmm! Then, as a surprise, Levi, the owner, made me his family's secret recipe chili. With chunks of tender pork and beef all simmered in a rich sauce, it was pure heaven! I even got Levi to share the recipe for what I now call "Secret Recipe Chili." It's online now so you can try it at home!
