Hi I'm Howard and welcome to the Mr. Food Test Kitchen! Mr. Food actually has a well deserved day off today, but that doesn't mean we're not cooking, as a matter of fact we're making blueberry muffins, and really the story behind these blueberry muffins right here...my aunt used to work at Jordan Marsh... a department store...and they had a bakery inside and they made the best blueberry muffins! Well we tested to see if we could come up with a recipe that came out as good as theirs and I think we did....watch what we did! We started by making a basic batter by beating together some sugar, butter, a few eggs, some flour, baking powder, salt, milk and vanilla. Now we add about a half a cup of mashed blueberries, (yes, mashed blueberries and trust me on this one...it's gonna give our batter a ton of flavor) now we're just gonna add our blueberries.... A little trick? Toss 'em in a bit of flour (that way they won't sink to the bottom of our muffins.) Now, once the blueberries are mixed in we fill our muffin tin about of the way full with the batter - and top them off with a bit of sugar, and when these come out of the oven...they looked and tasted just like I remembered! The muffin were so moist and every bite was just filled with blueberries. And the sugar on the top, that gave it just the right amount of crunch - look, the recipe for what I call "My Aunt's Blueberry Muffins" along with a free downloadable muffin e-Cookbook are both online now, and I promise These are going to be the best blueberry muffins you've ever had!
