October is National Pasta Month, and with so many of our favorite Italian dishes starting with pasta, we'll need a good homemade Italian sauce! Howard: That's for sure! Ya know, 'cause pasta is like a blank canvas and the sauce is like paint to an artist! And one of my favorite sauces has to be, Bolognese! Which today is simply a fancy name for a rich meat sauce? And ya know for the last few days we've been testing and tasting a few variations of 'em and what we came up with, is loaded with flavor! Here's what we did! In a large pot, we browned about a pound or so of ground beef with a bit of salt and pepper - before adding some chopped green pepper, onion, garlic, and shredded carrot. Okay, once the veggies are tender... We add in a couple cans of tomato sauce, and oregano and we'll let that simmer for about 20 minutes. Mr. Food: Ya see carrots; add a bit of sweetness, that cuts the tartness from the tomatoes. Howard: It looks like our pasta's done! Just make sure you don't overcook it... since we're serving it with a heavier sauce like this! 'Cause when we ladle this fresh-tasting meat sauce over a little pasta with some fresh basil stirred in, it's a masterpiece! Maybe top it off with a grated Parmesan and get ready to dig in! Look, the recipe for "Rigatoni Bolognese" is online now...and when you look around your table, you're gonna find everyone looking very, very anxious, Mr. Food: We can't blame them for feeling anxious, between how tempting it looks... And then, the taste... "OOH IT'S SO GOOD!! "
