Ingredients:
1 Beef Sirloin Tip Steak or London Broil, cut 1” thick 1 1/3 C Prepared Salsa, divided 8 C Chopped Iceberg Lettuce, or Prepackaged Iceberg Lettuce Mix 1 Can (15 oz.) Black Beans, rinsed & drained 1 C Frozen Corn, defrosted 1/3 C Prepared Ranch Dressing 1 C Broken Tortilla Chips (optional) Preparation: Place beef steak and 1 C salsa in a food‐safe plastic bag; turn steak to coat. Close bag securely and marinate in refrigerator for 6 hrs. or as long as overnight, turning occasionally. Remove steak from marinade; discard marinade. Place steak on grid over med. heat. Grill, uncovered, 16 ‐ 18 min. for medium rare doneness, turning occasionally. Remove, let stand 10 min. Meanwhile, combine lettuce, beans, and corn in a shallow serving bowl; toss. Carve steak into thin slices; arrange on top of salad. Drizzle dressing and remaining salsa separately over beef. Sprinkle with chips, if desired. Makes 6 Servings |
