Mr. Food: Back to School Sept 10, 2011

This time of year we're getting back in the groove after a busy summer! To some of us, that means we're in the back-to-school routine, while to others it means vacations are just a memory! But one thing we can all count on ...is we're looking for a quick and easy way to get dinner on the table...Okay! In a skillet in a bit of butter, we saut a mixture of some minced garlic, sliced scallion, chopped parsley, oregano and salt  ...takes only a couple of minutes. Meanwhile, we place a couple pounds of fish fillets that we cut into about 2 inch pieces and place them in a baking pan. Use whatever your favorite is or whatever's on sale! Okay! Now we pour our scampi sauce over the fish, making sure we cover it pretty evenly; and believe me this sauce is just packed with flavor! Okay, after we bake that off, and the fish flakes easily, which by the way takes just minutes ...it's done! Does that ever look and smell good!! If we serve it up over a bed of wilted spinach and a squeeze of fresh lemon, are we in for a meal that's not only seaworthy, but worthy of raves with every bite! And when it's this fast and this easy...it could make us feel like we're still on vacation and still enjoying lots of memories of "OOH IT'S SO GOOD!! "
