Mr. Food: Drunken Chicken August 21

Mr. Food: we're always looking for easy meal ideas that cook up quick, cause nobody likes to spend time in a hot kitchen this time of year! Well, what our test kitchen team is working on today avoids that heat, and has a secret ingredient that really gives it a load of flavor! Howard: Ya know, that secret ingredient...is rum....and it'll give our dish today a tropical taste - and all we do is We make a marinade by mixing together some light rum, along with some soy sauce, lime juice, brown sugar, and a few seasonings! Ya know, Mr. Food, just like when some people like to cook with wine, they say, some for the dish, some for themselves...and with rum it's the same way, but we'll ...leave that up to you... Ok, we pour the marinade over some chicken breasts and into the fridge they go for about an hour, to allow the flavors really to sink in. Look, here's some that we sauted in melted butter, when they're golden like this... remove them from the pan and In that same skillet, add in mushrooms, and the remaining marinade and about a cup of cream of coconut ... Mr. Food: and if you prefer you could use rum extract instead of the rum ...that's okay too! Either way, when you serve this sauce over the chicken - maybe along with some rice to sop up every drop! It's like a tropical vacation with cooling breezes! Howard: look, the recipe for "Drunken Chicken" is online now.... ready to turn any ho-hum dinner into a real party!! Drunken chicken! What a crazy name! Mr. Food: It really is, but that's what it is! And ya know...doesn't matter what ya call it... "OOH IT'S SO GOOD!! "
