Here in the Test Kitchen, we just love coming up with recipes that have unexpected ingredients in them. And today, we're gonna share with you some awesome homemade cookies that have a special "can't get enough of 'em" taste. Just watch! After creaming together some brown sugar and shortening till it's light and fluffy - we beat in an egg and a bit of almond extract - now we'll add in some melted chocolate chips (and we can melt them right in the microwave in no time). And get this: we'll beat in our secret ingredient - some mashed potatoes! Yeah, you heard me right, mashed potatoes, because they keep the cookies from flattening, giving us something nice and thick to bite into. Now we add the rest of our cookie basics - mixing it until the batter is smooth, like this. And if we want, we can add in some chopped nuts and those can be walnuts, pecans, even peanuts, really whatever your family likes. Once that's all combined, we drop the batter a couple of inches apart on cookie sheets. That way they won't spread and touch each other when they bake. And after they cool, we frost them with some fudge icing and sprinkle them with one of my favorites: nonpareils candies. Is this ever decadent or what? Let me tell ya, when we put these out with a glass of cold milk, they're gonna be gone before you know it!
